Find these wines near you: https://www.boissetcollection.com/about/locator Roasted Potatoes with Caviar Recipe Ingredients: • 1 1/2 lb. small ( 1 ½ inch) potatoes, 12 to 16, unpeeled and well scrubbed • 3/4 cup crème fraiche • 2 tsp. finely chopped fresh chives • 1/4 tsp. salt • 2 oz. any variety of caviar or fish roe Directions: Preheat an oven to 325°F. Boil potatoes at a soft boil until cooked. Remove from the water and let cool. Cut off top and a small part of the bottom so it will stand up on your platter. Carefully scoop out all the pulp, leaving only a thin shell. Place the pulp in a bowl. Return the potato shells to the baking sheet, hollow sides down, and brush the skins with the oil. Return to the oven and bake until crisp, 8-10 minutes. Add the sour cream, the chives, and salt to the potato pulp and mix well. Pack the potato mixture into a pastry bag fitted with a medium star tip and pipe the mixture into the shells. Top with caviar Cucumber and Smoked Salmon Recipe INGREDIENTS FOR THE LEMON DILL CREAM CHEESE: • 3/4 goat cheese or cream cheese • 2 tablespoons Greek yogurt • Zest from 1 lemon • 1 tablespoon freshly squeezed lemon juice • 1 tablespoon minced fresh dill • A pinch of sea salt TO ASSEMBLE: • 3 mini cucumbers, sliced • 5 ounces cold smoked salmon • Dill and fresh cracked pepper, to garnish Add all of the lemon dill goat cheese ingredients to a medium-sized bowl. Use electric beaters to whip together. Transfer to a piping bag fitted with a star attachment, or use a small resealable plastic bag and cut off the tip. Lay the cucumber slices out on a serving tray. Roll small strips of the smoked salmon and place them on top of the cucumber slices. Pipe the cream cheese on top of the salmon and garnish with a little fresh dill and fresh cracked pepper.
